Egusi Soup

 Egusi Soup is one of my favourite soup. I love preparing it and never get tired of it. I always serve it with pounded yam.

 Ingredients:

2 peak milk tins of ground egusi

1/4 kg beef

1/4 kg biscuit bones 

1 medium cup blended tomatoes, bell peppers and onions 

1 chopped onion 

1 cup chopped ugu leaves 

Iru

Salt to taste 

2 stock cubes 

1 tbsp ground mint and curry leaves 

Pieces of cloves

100g palm oil

  Method 

Omelette Slices

I love omelette and never get tired of preparing it. It's easy to prepare. All you need is eggs and vegetables and few other ingredients. I was so tired to cook yesterday and decided to make the omelette. And I wanted something light too. I served it with tea. Hope you will try it .

Ingredients:

4 eggs

1 peeled and diced carrot

1 diced onion

1 diced bell pepper

1 ground scotch bonnet

1 tsp crushed garlic and ginger

1 stock cube

1/2 tsp seasoned salt

A dash of cinnamon

A dash of mexican spice

2 tbsp oil

Masala Rice

Masala Rice is an Indian Cuisine. The recipe is easy and delicious. But I replaced green peppers with red peppers. And I added some spring onions and some spices too. Below is the recipe :

  Ingredients :

1 peak milk tin of rice 

2 diced onions

2 diced bell peppers

Pieces of green beans (diced) 

2 peeled & chopped carrots 

A handful of chopped spring onions 

1/2 tsp cumin seeds 

A dash of ground roasted cumin 

A dash of ground cinnamon 

Chilli seasoning 

1 tsp masala powder 

1 stock cube 

Chapati with Spiced Beef Soup

Chapati is an Indian flat bread served with varieties of soups, i.e potato soup, etc.It is a tasty meal when served with any of the soup. I served mine with Spiced Beef Soup. Below is the recipe.

Ingredients :

3 peak milk tins of flour 

1 tsp salt 

1 tbsp margarine 

  Method 

Seive the flour in a mixing bowl. Add the salt, margarine and mix. Add some water and knead on a board till the dough is soft. Put it back into the bowl and cover with a cling film. Allow to rest for 20 minutes.

Chocolate, Caramel and Strawberry Popcorn

CHOCOLATE POPCORN

Ingredients:

1 cup of popcorn

5 tbsp chocolate syrup

  Method

Pour the popcorn in a medium bowl. Add the chocolate syrup. Mix with a spoon, then toss to combine. Pour in a tray and refridgerate for 10- 15 minutes to chill. This enables the popcorn to set and also prevent the chocolate popcorn from dripping.

 

 CARAMEL POPCORN

Ingredients:

1 cup of popcorn

5 tbsp caramel syrup

Potato Casserole

I am a fan of potatoes. I love all food that is prepared with potatoes. Below is the recipe, hope you will try it.

 Ingredients:

15 pieces of potatoes (peeled & sliced)

2 sliced onions

2 sliced green & red peppers

5 eggs

2 stock cubes

1 tsp chilli seasoning

1 tsp seasoned salt

1/2 tsp oregano

1/2 tsp paprika

1/2 tsp ground garlic

A dash of Italian seasoning

A dash of ground All Spice

4 sprigs of curry leaves

1 tsp oil for brushing the pan

Baked Red Velvet Pancakes

I am a fan of pancakes especially savoury pancakes. I never get tired of eating it and it's easy to prepare. I wondered if pancakes can be baked, I decided to give it a try and to make it more unique. I made red velvet pancakes. I was very happy with the result. It was nice and so delicious. Here is the recipe below:

Ingredients:

1 1/2 cups flour

1 tsp baking powder

1/2 tsp salt

1 tbsp lemon

1 tsp vanilla flavour

Few drops of red colour

1 tbsp cocoa powder

2 eggs

1 cup of milk

1/4 cup of oil
